A Bitterroot Celebration
A wonderful collection of this season's finest semi-soft, blue and hard cheeses, as well as accompaniments to highlight the cheese and Bitterroot Valley's finest flavors.
Zephyr: A bloomy-rind rich and creamy semi-soft cheese with a hint of blue.
Brontide: A rich, creamy and crumbly, melt in your mouth, blue cheese aged for 3 months. This cheese is salty in flavor from the blue veining, with sweet licorice notes in the paste as well. Awarded 3rd place at the 2017 American Cheese Society's Competition for farmstead sheep's milk cheese aged more than 60 days.
Harbinger: Firm but not dry with gracefully smooth nutty flavors. We wash this cheese every few days with a local Montana brewery's Oatmeal Stout, insuring a soft, easy slicing texture and a beautiful rind. Aged a minimum of 3 months. Awarded 2nd place at the 2018 American Cheese Society's Competition for sheep's milk cheese aged over 60 days.
Sentinel: Aged for over two years, giving this cheese a distinct sharp and spicy flavor with mild buttery characteristics. Amazing grated over any holiday vegetable dish or winter comfort foods like lasagna and pizza.
Salami: a hearty and spicy salami made from local pork and beef. Balances wonderfully with the sharp flavors of Harbinger and the sweet blue flavors in the Brontide.
Wustner Brothers Honey: local Montana knapweed honey which pairs beautifully drizzed on Zephyr and Sentinel.
